After vinification, the wine undergoes the ancient Tuscan technique known as “governo all’uso toscano”: partially dried Sangiovese grapes are added to trigger a renewed fermentation inside the amphora.
The wine then matures for twelve months in amphora, followed by at least six months of bottle aging.
